El Babou is Olivier Saint-Priest's boutique natural wine project in the Jura, a micro-estate of exceptional character that produces some of the region's most sought-after and limited-production bottles. Working with traditional Jura varieties, Poulsard, Trousseau, Savagnin, and Chardonnay, from organically farmed parcels, Olivier applies the region's most rigorous low-intervention principles: native yeasts, zero additives, no filtration, and long aging that allows the wine's terroir signature to develop fully. Deeply knowledgeable about both Jura's traditional and modern winemaking methods, his wines sit at the intersection of precision and soul.
