El Babou

El Babou is the side project of Olivier Saint-Priest, a winemaker at Domaine Labet — one of the Jura's most revered estates. If that name means anything to you, you already know what to expect: wines of extraordinary precision, freshness, and terroir transparency, made from south Jura vineyards with no compromises in the cellar.
The El Babou label is boutique by design. Tiny production, no sulfur added, sourced from undisclosed parcels between Rotalier and Saint-Lothain in the south of the Jura. Olivier works with Chardonnay and Savagnin for the whites — including the legendary Champs-Longs, aged sous voile for 24 months — and a blend of traditional red varieties for the Tinto.
These are insider wines. The kind that appear on the lists of serious natural wine restaurants, trade hands on secondary markets at multiples of retail, and almost never make it outside of France in meaningful quantities. The Wild West label is intentional — Olivier seems to delight in the contrast between his quiet, meticulous craft and the irreverent branding.
