Pupillin is a tiny village near Arbois in the heart of the Jura — and it happens to be home to some of the most sought-after natural wine in France. Tony Bornard lives in the oldest building in the village, next door to the legendary Pierre Overnoy. That tells you something about the neighborhood.

Tony took over the family domaine from his father Philippe in 2017, one of the Jura's most celebrated natural winemakers. Rather than simply inherit a legacy, Tony had already been quietly building his own estate since 2013. When the two merged, the result was 11.5 hectares of biodynamically farmed vines on high-altitude limestone and clay soils — conditions that slow ripening and coax out the kind of aromatic precision the Jura does better than anywhere else.

He works with the full cast of Jura's native grapes: Poulsard, Trousseau, Savagnin, and the rare Melon à Queue Rouge, alongside Pinot Noir and Chardonnay. In the cellar, fermentation happens in tank with extended maceration, then the wines move to old oak foudres for aging — anywhere from one year to several, depending on the cuvée. When the vintage allows, he also makes Vin Jaune, Vin de Paille, Macvin, and Pét-Nat.
