🍇 Grape: Ploussard

🌍 Country: France

📍 Region: Jura

🍃 Viticulture practice: Natural

The 2022 Tony Bornard "Point Barre" Côtes du Jura is varietal Poulsard (Ploussard) from old limestone-rich Pupillin vineyards — the Jura's most delicate indigenous red grape, naturally pale, aromatic, and low in tannin. Semi-carbonic, whole-cluster fermentation, native yeasts, no added sulfur. 2022 was hot and dry in the Jura, but Pupillin's limestone helped hold acidity and Bornard's hands-off approach kept the wine transparent: pink grapefruit, strawberry, rose, white pepper, a chillable finish. Distinct from his Trousseau cuvées in being lighter-weighted and almost rosé-adjacent. The kind of Jura bottle that converts skeptics.

Domaine Bornard – Pupillin, Jura

The Bornard family estate, located in Pupillin near Arbois in the heart of the Jura, is one of the region’s most exciting natural wine producers. After the retirement of the acclaimed Philippe Bornard, his son Tony took over in 2017, carrying forward the family’s natural philosophy while pushing the domaine into a new era of precision and soil-focused viticulture.

Today, Tony farms 11.5 hectares of vines biodynamically, cultivating Jura’s native grapes—Poulsard, Trousseau, Savagnin, and Melon à Queue Rouge—alongside Pinot Noir and Chardonnay. His vineyards sit on limestone and clay soils at high altitudes, ensuring freshness, slow ripening, and aromatic depth.

In the cellar, Tony continues the tradition of minimal intervention winemaking, producing wines that are pure, energetic, and distinctly Jurassien. The range includes appellations from Côtes du Jura and Arbois Pupillin, as well as traditional specialties such as Vin Jaune, Vin de Paille, Macvin, and Pét-Nat when vintages allow.

Highly sought-after and produced in very limited quantities, Bornard wines are natural, pure, and full of energy, representing both the history and the modern spirit of the Jura.
