Domaine Bornard – Pupillin, Jura
The Bornard family estate, located in Pupillin near Arbois in the heart of the Jura, is one of the region’s most exciting natural wine producers. After the retirement of the acclaimed Philippe Bornard, his son Tony took over in 2017, carrying forward the family’s natural philosophy while pushing the domaine into a new era of precision and soil-focused viticulture.
Today, Tony farms 11.5 hectares of vines biodynamically, cultivating Jura’s native grapes—Poulsard, Trousseau, Savagnin, and Melon à Queue Rouge—alongside Pinot Noir and Chardonnay. His vineyards sit on limestone and clay soils at high altitudes, ensuring freshness, slow ripening, and aromatic depth.
In the cellar, Tony continues the tradition of minimal intervention winemaking, producing wines that are pure, energetic, and distinctly Jurassien. The range includes appellations from Côtes du Jura and Arbois Pupillin, as well as traditional specialties such as Vin Jaune, Vin de Paille, Macvin, and Pét-Nat when vintages allow.
