Côte-Rôtie from Thibaud Capellaro, a visionary young winemaker who has been redefining natural wine on the legendary slopes of the Northern Rhône since 2018. From organically farmed parcels on the steep, terraced granite hillsides of Ampuis, this 100% Syrah is spontaneously fermented with native yeasts and aged in old casks. No fining, no filtration, minimal to no added sulfur.
Thibaud came to winemaking via business school, training alongside renowned producers in France and Australia before carving out his own terraced parcels in Côte-Rôtie, some reclaimed from complete abandon. The result is a natural Côte-Rôtie of rare elegance and energy.
Tasting: Crushed rock, black pepper, violets, and wild dark fruit. Beautiful Rhône rusticity with an ethereal, delicate touch. Real energy and freshness from a famed hillside, at just 12.5% ABV. Exceptional.
