Nestled just outside Nuits-Saint-Georges, in the small village of Chaux, Domaine Nicolas Raspiller is a rising star in Burgundy. Nicolas founded his domaine in 2017 after gaining invaluable experience working with top producers in both Burgundy and Champagne. With a deep respect for nature, he immediately transitioned his vineyards to organic farming, embracing sustainable practices that reflect his commitment to biodiversity.
In addition to being a talented winemaker, Nicolas is also a dedicated beekeeper, a passion that is symbolized in the unique labels on his bottles. His approach in the cellar is equally natural—using indigenous yeasts for fermentation, avoiding artificial additives, and aging wines in old barrels to preserve purity and expression of terroir. Each bottle reflects his dedication to crafting authentic, terroir-driven Burgundy wines.
His lineup features appellations such as Bourgogne Aligoté, Hautes Côtes de Nuits Blanc, Bourgogne Passetoutgrain, Côteaux Bourguignons, Bourgogne Rouge, and Hautes Côtes de Nuits Rouge. One of the true gems of his collection is his unsulfured Aligoté, a standout wine that exemplifies his natural winemaking philosophy.
