The Labet family pioneered the ouillé (topped-up) style in the Jura, and En Chalasse is their high-elevation parcel on blue marl. The 2015 Savagnin was fermented with native yeasts in neutral barrels and topped regularly to emphasize tension over oxidative notes.
The wine glows with aromas of yellow apple, quince, curry leaf and toasted hazelnut. On the palate it is textural yet precise, offering salted apricot, citrus peel and a laser of saline minerality.
Serve at 50–52F with morel cream chicken, alpine cheeses or roasted cauliflower. Only a few cases made it to the U.S., making this a prized bottle for Jura devotees.

Founded in 1974, Domaine Labet has been a quiet pioneer in redefining Jura winemaking over two generations. Today led by Julien Labet, the estate was among the first in the region to champion the ouillé (non-oxidative) style for Chardonnay and Savagnin, producing wines of striking freshness and precision that opened a new chapter for the Jura. Farming organically across some 12 hectares of extraordinary terroir in Rotalier, including limestone and blue marl parcels that produce Chardonnay of almost Burgundian finesse, Labet works with native yeasts, no added sulfur, and the patience to allow each wine its full expression. His limited-production, estate-bottled wines are benchmarks of modern Jura winemaking and among the most sought-after in the natural wine world.
