The 2016 Domaine Labet Côtes du Jura Vin Jaune is one of the rarest and most ritualistic wines in France — a 100% Savagnin aged at least six years and three months under a film of yeast (the voile) without topping up, allowing the wine to develop the singular nutty, oxidative, savoury character that has no parallel anywhere else in the wine world. The clavelin — the traditional squat 620ml bottle used only for Vin Jaune — exists because that is roughly the volume that remains in a barrel after the long élevage: the share lost to evaporation is called la part des anges, the angels' share.
Made in the classical Labet style — old-vine Savagnin from low-yielding parcels on marl and limestone, fermented with native yeasts, then years under voile in old wooden casks — the 2016 carries the hallmarks of great Vin Jaune: walnut, curry, dried orange, almond skin, smoke, brown butter, beeswax, and the salty, savory minerality that makes Jura whites unmistakable. The finish is enormous, the texture taut, the acidity electric despite the oxidative aging. A wine that demands attention and rewards it — built to age 50+ years, magical with aged Comté, jambon de Bayonne, morels in cream, or a fistful of walnuts and a quiet hour.
About Domaine Labet
Domaine Labet is one of the most respected estates in the Jura, based in the village of Rotalier in the Sud Revermont. Founded by Alain and Josette Labet and now run by their children Julien and Charline, the domaine farms around 12 hectares of low-yielding old vines on the Jura's distinctive marl and limestone soils. The family was among the early pioneers of organic and biodynamic viticulture in the region, and Julien — who took over winemaking in the early 2010s — has built a global reputation for his rigorous, terroir-transparent Chardonnays and Savagnins, bottled by individual parcel and aged at length in old wood. The Vin Jaune is the estate's most patient cuvée: tiny production, six-plus years under voile, and one of the great expressions of Savagnin in the Côtes du Jura.
