Là-Haut ("up there") comes from the highest, oldest block of vines on Nicolas Jacob's original one-hectare parcel in L'Étoile — the crown jewel of his estate. These mature vines on limestone-rich soils produce tiny yields of extraordinary concentration. Fermented and aged in neutral barrels with indigenous yeasts. Zero additions.
This is the pinnacle of Jacob's L'Étoile Chardonnays: where Là-Bas offers freshness and minerality, Là-Haut delivers depth, complexity, and an almost Burgundian sense of completeness. Among the most achingly accomplished wines coming out of the Jura today.
