Les Chazaux is one of Nicolas Jacob's most prized vineyard sites — a 2.5-hectare parcel on predominantly triassic marl in the Sud-Revermont. This single-vineyard Chardonnay is fermented in demi-muids with indigenous yeasts and aged with patience and precision. Unfined, unfiltered, zero sulfur added.
A Ganevat protégé who trained at Domaine Macle, Nicolas farms all his vines under organic and biodynamic principles, crafting micro-cuvées that express the individual character of each parcel. Les Chazaux delivers a richer, more textured expression of Jurassian Chardonnay compared to his L'Étoile bottlings.
Tasting: Golden apple, white flowers, and subtle hazelnut aromas. The palate shows beautiful weight and concentration with a core of ripe stone fruit balanced by bright acidity and a long, earthy mineral finish.
