100% Savagnin from the Les Chazaux vineyard on gray lias marl in the Sud-Revermont. Hand harvested, pressed gently, and fermented with indigenous yeasts. The wine undergoes extended élevage in half-tanks for 24 months with no bâtonnage, no filtration, and absolutely zero additions.
Savagnin is the Jura's signature white grape — capable of producing both fresh ouillé styles and the region's legendary oxidative Vin Jaune. Jacob's version leans toward the ouillé tradition, preserving the grape's extraordinary aromatic complexity while maintaining tension and purity.
Tasting: Intense nose of yellow apple, walnut, curry leaf, and beeswax. The palate is broad and powerful with a waxy texture, razor-sharp acidity, and a deeply savory, saline finish. A wine of profound character and remarkable ageing potential.
